This is an awesome salad that is easy to make yet very flavorful. Thai cucumber salad has the quintessential taste of Thai cuisine.

  • Two cucumbers
  • Two green spring onions
  • One purple onion
  • One fresh red chili pepper
  • Half cup of coriander/cilantro
  • Fourth cup of dry roasted peanuts
  • Two table spoons fish sauce
  • Half a lime
  • One clove of garlic minced
  • Half table spoon shrimp paste
  • One table spoon soy sauce
  • Fourth cayenne pepper
  • One table spoon sugar
  • Some small shrimp Optional
  1. Salad Preparation:
  2. Step One: Peel the cucumbers with a vegetable peeler, if you prefer your cucumber with the peel in tacked skip this step. Then cut the cucumber length wise into long strips. Then slice width wise so that you are left with little rectangle pieces.
  3. Step Two: Mince the green spring onions, purple onion, and chili pepper
  4. Step Three: Roughly chop up the peanuts
  5. Step Four: Mix the cucumber, green spring onions, purple onion, and chili pepper
  6. Thai Cucumber Salad Dressing Preparation:
  7. Step One: Combine the following ingredients into a cup: fish sauce, garlic, shrimp paste, shrimp paste, soy sauce, cayenne pepper, and sugar. Squeeze the lime over the ingredients and mix them all together.
  8. Final Preparation:
  9. Step One: Pour the dressing on the salad and mix them together well.
  10. Step Two (optional): Mix some shrimp into the salad
